Bar-B-Q Beef and Beans---Anne Fitzpatrick-Jones
1 lb. Highland hamburg
1/4 cup chopped green pepper
1/2 cup minced onion
1/2 cup diced celery
1 8 oz. can tomato paste
1/2 cup water
2 tbsp. vinegar
1 tsp. dry mustard
4 tbsp. brown sugar
2 cans Bush (pork, onion, brown sugar) Beans
1/4 tsp. garlic salt
1/2 tsp. salt
1/2 tsp. pepper
Cook hamburg and vegetables in hot fat until soft. Add remaining ingredients except beans. Blend and simmer 5 minutes. Pour beans into bean pot, add meat mixture. Mix well. Bake 45 minutes at 350 degrees.

Three Highland Marinades---Anne Fitzpatrick-Jones
(Marinate in morning to serve for dinner)
1. 1/3 cup soy sauce, 1/3 cup cooking sherry, 1/3 cup honey or brown sugar, 3 cloves garlic.
2. 1 cup soy sauce, 1/2 cup cooking sherry, 1/4 cup oil.
3. 1/2 cup cooking sherry, 1/2 cup Japanese soy sauce, 2 tbsp. cooking oil, 1 clove garlic, 1/4 tsp. ginger.

This dish is extremely flexible and forgiving. Enjoy!
Gently boil four pounds of sweet potatoes or yams until just done, skin and slice into half-inch
rounds. Core and slice thinly four pounds of baking apples. Alternate layers of potatoes and apples
in heavy, ovenproof casserole. Top each layer with dabs of butter, brown sugar or maple syrup,
any dried fruits or nuts you have on hand, coarsely chopped (dried cranberries and walnuts are
a favorite combination), and sprinkle with pumpkin pie spices. Pour several ounces of any fruit
juice over the top, and bake covered at 350 degrees for 40 minutes, or until the apples are softened.
